Spice Mix for Lamb and Goat

This spice mix is ideal for oven-baked or spit-roasted lamb and goat. It gives a wonderful ruby and crunchy crust to the meat. It can even flavor the potatoes that accompany the meat. Mix a large portion of the spice mix with a little olive oil, lightly massage the skin of the lamb and let it marinate for as long as you can.
This spice mix is perfect for lamb or mutton ribs on the grill. Combine the spice mix with mustard and olive oil to spread it on the ribs while they are being grilled and sprinkle a little rosemary or thyme in the end.
